I don't there is a reader field on the person document. Either you create one or you go to the views and make a view selection formula to exclude this hidden user.

You could also have a secondary directory, which removes the user from the primary directory, but does not hide him.

There is no functionality in the current domino directory to hide an user -- you have to modify the design to accomplish this task.
